College life has led me to learn how to cook using what I have, rather than what I need. Thus came the birth of this next recipe, Bacon Thai Pizza. I wanted to have some semblance of pizza for dinner one night, but didn’t have pasta sauce, the right crust, nor the money or will to order one from the myriad of pizza shops in town. I fumbled around in my cabinets for a bit and came up with this delightful asian spin on personal pizza. Combining Thai Peanut sauce (which I’ve recently discovered is the nectar of the gods), green onion, cheddar cheese, and flatbread, I created something that I’ve made a few times since it’s been so delicious. And of course, bacon just makes life better.
Of course, if you don’t have flatbread, you could use pitas or even toast. I cook mine on a
Pizza Pizzazz to save time and dishes.

Bacon Thai Pizza1 8” round flatbread
¼ cup Thai Peanut Sauce
1/3 cup shredded sharp cheddar cheese
2 Green onions, sliced thinly
2 pieces of bacon, cooked and sliced into thin strips
Preheat oven to 425o
Lay the flatbread on your cookie sheet and smear the Thai peanut sauce all around leaving about ½” along the edges. Sprinkle the bacon and green onion on the sauce, and cover with the cheese. Bake about 8-10 minutes, or until the cheese is slightly golden and the sauce is bubbling.
