Thai Food Spin

The other night I went to the store and picked up some Thai peanut sauce for a recipe I found online for Chicken Satay Pizza. Having some left over, I decided to experiment with it and came up with this wonderfully spicy variation of traditional Chicken Satay.

Spicy Chicken and Vegetables with Peanut Sauce:



2 Boneless Skinless Chicken Breasts, cubed
1/2 cup frozen peas, thawed
1/2 cup frozen green beans, thawed
1 medium sized yellow onion, diced
1 tablespoon garlic, minced
1/4 cup Thai Peanut Sauce
Black Pepper
Sesame Oil
Chili paste, or Sriracha

In a large non-stick skillet, put 2 tablespoons of the Sesame Oil and heat. Pepper the cubed chicken and add it to the hot oil. Cook it until it is no longer pink and slightly golden, about 5 to 6 minutes. Add a squeeze of Sriracha, about 1 teaspoon and stir. Remove from the pan and set aside. In the same pan cook the onion until golden and translucent. Add the garlic and cook until fragrant, about 3 minutes. Add the frozen vegetables and cook until heated through, about 5 minutes. Re-add the chicken to the pan. Add the peanut sauce and stir until heated through. Enjoy!!
